Valentine’s Day is not taken lightly here at the Kiwi Cook home. Today were cooking to impress the ladies, lovers, mothers and brothers around the world with this special Chocolate Cherry Fondant certain to please your loved ones on that special day. With this simple to make dish you will the envy of every girl or boys heart! Camera, Editor: Ashley Pitman Cook: Sterling Arnet Facebook: www.facebook.com Twitter: twitter.com Chocolate fondant: – 125g dark chocolate 70% cocoa – 125g butter – 2 whole eggs – 2 egg yolks – 60g sugar – 10g flour – Cocoa powder and butter for coating moulds – 4 X 65x65mm moulds Port glazed cherries: · 16 cherries, pitted · 150 ml Port · Sugar to taste – Preheat oven to 230°C. – Coat the inside of each mould with butter then dust with cocoa powderto prevent fondant sticking. – Melt butter and chocolate on a double boiler. – Pit the cherries. Add cherries to a pot with the port and reduce untilthe liquid coats the back of a spoon. Add sugar to taste. – Whisk sugar, eggs and egg yolks in a bowl until creamy and fluffy. – Once chocolate and butter is a smooth consistency, sift and add the flour. – Very gently fold the chocolate mixture into the egg mixture, makingsure not to remove the air. – Fill each mould halfway, add 2 glazed cherries into the centre of each mould and then fill with mixture so that moulds are ¾ full. – Bake for 6-8 minutes at 230°C until the top is slightly hardened. – Once cooked, leave to rest for 2 minutes before using a knife …
